We invented a country so that we could invent a cuisine. That country probably exists, if many-worlds theory is true. The café definitely does: Kaltoran street food and coffee, behind the DADAA building on Adelaide Street, next to Clancy's. Open till midnight on Fridays and Saturdays.

The short version
From 1 October we're open seven days a week. Coffee from 7am, or 9am on Sundays. Street food that's warm and quick, because the cooking is done before you arrive.
We're not publishing the food menu yet. It isn't finished, and we'd rather not print something we'll have to change. The menu page will fill in as we get closer. The coffee is the standard Australian espresso menu. Freo already knows what it likes. We make a decent one and leave it at that.
Friday and Saturday nights we're open until midnight. That's the part we care most about. We're a café, so it stays quiet. Coffee and something to eat at 11pm, a chessboard on the counter, next door to Clancy's. Not many places in Fremantle do that after nine.
About the name
Kaltora is a country we made up. We wanted a cuisine of our own, and a cuisine needs somewhere to come from, so we gave it one: five regions, a king, a language, a flag with a fork on it, and about five thousand years of history. Kal means hearth and tora means land.
If the many-worlds interpretation of quantum mechanics is right, somewhere it's real. Here, it's a café in Fremantle, run on a few rules we wrote for the country and then decided we liked. Feed people first, ask questions later. Keep a spare place set at the table. Don't shut the kitchen while someone's still hungry.

The practical bit
